Fresh Mango Ice Cream

Honestly growing up in Pakistan and having access to the worlds most delicious mangoes it was very difficult to bring myself to like the mangoes available in North America. However, in the past few years I have noticed the mangoes being brought into the country have become more flavorful.

This mango ice cream is creamy and satisfying. The combination of fresh mangoes and mango pulp gives it both sweet and tart which I honestly really enjoy in fresh ice cream

Ingredients:

2 Cups Heavy Cream Chilled

1 Cup Mango Pulp

1/2 Cup Fresh Mangoes Chopped

1/2 Cup Condensed Milk

1/4 Tsp Salt

6 Drops of Yellow Food Color (optional)

Directions:

  1. In a bowl mix the chopped mango, mango pulp, condensed milk and salt. At this point you can add the yellow food color if you want. Set aside.
  2. In a chilled mixing bowl, add 2 cups of chilled heavy cream and whip it until soft peaks form.
  3. Slowly fold the mango mixture in the whipped cream.
  4. Now transfer the mango cream in an airtight container, cover it with plastic wrap and close the container.
  5. Freeze overnight for best results.
  6. Enjoy!!

TIPS & TRICKS

-The ingredients are pretty straightforward for this recipe, however, should you feel you mangoes are more tart then you like, its perfectly okay to marinate them in 2 tbsp of sugar.

-Making sure you heavy cream is kept chilled until the last minute along with your mixer attachments and bowls will ensure a more creamy, light and fluffy heavy cream. This will result in a creamy but light and smooth ice cream.

-When combining the whipped cream and mango pulp mixture make sure you don’t fold the two with a heavy hand deflating the heavy cream.

-When transferring the ice cream base into a container for freezing, make sure you cover the container with plastic wrap before you close the lid to prevent ice crystals from forming while the ice freezes.

-Wait 8 to 10 hours for the ice cream to set completely, do not disturb the freezing process by constantly checking on the ice cream. Opening and closing of the container will end up in ice crystals in your final product.

Notes

Make sure your mixing bowl and attachments have been placed in the freezer for 1 hour before you use them.
